AVOCADO AND SPINACH EGG SALAD
Ingredients:
4 large eggs, hard-boiled and chopped
1 ripe avocado, diced
1 cup fresh spinach, chopped
1/4 cup Greek yogurt or mayo (optional for extra creaminess)
1 tbsp Dijon mustard
1 tbsp lemon juice
Salt and pepper (to taste)
Fresh chives or parsley, chopped (for garnish)
Instructions:
In a large bowl, combine chopped eggs, avocado, and spinach.
In a small bowl, mix Greek yogurt (or mayo), Dijon mustard, lemon juice, salt, and pepper.
Pour the dressing over the egg mixture and gently toss until well combined.
