Heat the oven to 400 degrees Fahrenheit Line a baking sheet with parchment paper or a silicone baking mat. In a large bowl, whisk together one cup of all-purpose flour, one teaspoon of baking powder, one teaspoon of sugar, and a half of a teaspoon of salt. Toss three tablespoons of cold salted butter that you cut into quarter inch pieces into the dry ingredients. Cold butter is the secret to excellent biscuits because the butter creates steam as it melts in the hot oven. The steam from the melting butter expands between the layers of dough and this creates pockets of air that will give you a flaky biscuit. Working quickly using your fingers or a pastry blender, rub or cut the butter into the flour until it resembles coarse sand. Add a half of a cup of milk and stir just until the dough comes together. Using a large spoon, drop spoonfuls of the butter onto the baking sheet and bake until golden brown about 12 to 15 minutes. Let them cool a few minutes after taking them out of the oven.
