So you have a copious abundance of eggs crowding your fridge, and you’re wondering how you can preserve the eggs before they go bad causing a stinking mess. Well, let me introduce you to an easy way to store and preserve eggs: pickling. I ran into a similar problem recently on the Gubba Homestead where I was given a box of farm fresh eggs, and I didn’t know what the heck to do with them! I eat lots of eggs, but I definitely couldn’t gobble all these before they went bad. via @gubbatv
Dill Pickles
Refrigerator Dill Pickles Ingredients: • 1 ½ pounds pickling (Kirby) cucumbers • 2-4 cloves garlic, crushed or cut in half • 2 teaspoons dill seed • 1 cups white or apple cider vinegar • 1 cup water • 2 teaspoons table or canning salt Instructions: • Wash the cucumbers and trim about ⅛-inch off both ends. This removes the blossom ends which can make the pickles soft. Cut into slices or spears. • Place the garlic cloves and dill seed into a quart container or divide evenly between two pint jars. • Pack the cucumber into the jar(s). They should be tight but not squeezed into the jar. You want to avoid bruising or crushing them. • Combine the vinegar, water, and salt in a small pot. Bring to a boil. Delicious Pickle Recipe
In a large bowl, mix cucumbers, vinegar, sugar (if using), water, salt, black pepper, red pepper flakes, carrots, mustard seeds, and celery seeds. Stir until sugar and salt dissolve. Cover the bowl and refrigerate for at least 24 hours. The pickles are now ready to eat! Store them in the refrigerator for up to two weeks. Tips: For a spicier pickle, add more red pepper flakes. You can also add other spices, such as dill, garlic, or turmeric. These pickles are perfect with sandwiches, salads, and burgers.
