Prep all of the ingredients—diced potatoes, sliced smoke sausage and the trinity(onions, bell pepper and celery). Once that’s done, make a roux, stop it with the trinity and stir in shrimp stock or water. Once that simmers, add in the potatoes, cook until softened and add shrimp.
