This dish was inspired by my trip to Hanoi and sitting on a short plastic stool on a busy sidewalk, having the most delicious grilled pork and imperial rolls over silky rice noodles. The crunch of the imperial roll with the deeply caramelized and salty pork, bright notes of lime, spice and cool cucumber round out this classic version.

These bowls are composed of vietnamese rice noodles and egg rolls on a bed of shredded lettuce with fresh herbs and pickled radish and carrot. It’s also delicious with some sliced cucumber for that extra crunch. This bowl is finished with a vietnamese dipping sauce or nuoc cham, and for this version I of course used me homemade vegan ‘fish’ sauce.

Light, refreshing, fragrant and so yum! This Vietnamese vermicelli bowl with lemongrass chicken (Bun Ga Nuong) is an utter delight! Perfect on a weeknight and spectacular for entertaining. This crowd-pleaser salad is flavour packed and a complete joy to eat.
