Make high-poly organic models is by modeling it with regular #polygons then subdivide it to achieve a smoother look. You need to start with the larger shapes.

The topology/UV of this dog will be helpful when for when I resurface the head of my fox.  The body that I'm modeling is more human-like verses the dog body, so I'll need some other wireframes for that, but the ears and the neck will be a big help for me.
