KOREAN BBQ ‘PORK BELLY’ 🐷 written recipe below 👇🏾
For episode 2 of my Meatless Masterclass s2, we are using my favourite whole foods meat alternative; lions mane mushroom, which is soooooo fatty n meaty when prepared this way! 👇🏾ingredients👇🏾 -1 large lions mane floret -1 tsp garlic + onion powder -1 tsp gochugaru flakes (or chilli flakes) -3 garlic cloves -2 tbsp gochujang paste -1 tbsp soy sauce -juice of 1 lime -1 tbsp sugar -serve with sushi rice, cucumber, kimchi -garnish with sesame seed, chives and crispy onions 👇🏾method👇🏾 -sear the outside of the lions mane, then press into a flat steak and continue to sear. -mix the ingredients for the sauce, coat the lions mane then bake until browning. serve with the rice, veggies, kimchi and garnishes then enjoy. COCONUT LIME TOFU! where I’m sharing 15 dinner fixes in under 15 minutes !
Optional: - coat the tofu slices lightly in corn flour for a more crisp and golden texture. - If using silken-firm tofu, it is recommended to wrap the block between kitchen towels (placing a small saucepan on top). Let it sit for 10-15 minutes or so to drain out the excess water. Then pat tofu dry with clean kitchen towels and slice it. Remove the tofu and set aside. In the same pan, stir in: - 1 tbsp sesame oil - 1/2 onion, sliced - 3-4 cloves of garlic , minced - Knob of ginger, grated - 1-2 tbsp red curry paste (let me know if you want my homemade paste recipe) - 1-2 tbsp sriracha/ hot sauce Stir it together and once fragrant, add 250-300 ml coconut milk , then stir in: - 1-2 tsp brown sugar - 1-2 tbsp light soy sauce By @the_foodiediaries

VEGAN LUNCH😋 CHICKPEA PITA 🥙 VEGAN RECIPE
A quick lunch which you can also take with you to work! 😋 RECIPE (4 servings, 15min prep time): -1 bell pepper -1 onion -2 cloves garlic Fry for a few minutes -1 can (220g) cooked chickpeas -1 Tsp each salt, paprika and dried herbs -1 heaped Tbsp Ajwar or tomato paste Cook 2-3 mins. Then mash down. Cut your pitas in half and generously add the filling. Brush with some oil and fry each side until golden brown. Serve with sriracha Mayo.
